From Operations to Marketing and everything in between, the leaders behind Quaker Steak & Lube® work together with our franchisees, applying their over 200 years of combined restaurant and foodservice expertise to make the restaurant a success today.

Now let’s get into the specifics of our franchise development team:

John Ponczoch Senior Vice President, Food Marketing and Operations

Mr. John Ponczoch, a 30-year industry veteran, has been TA Restaurant Group’s Senior Vice President of Food Marketing and Operations since January of 2010. In addition, he has served as TA’s VP and Director of Food Operations since 2008. As the leader of the Quaker Steak & Lube® team, he brings with him unparalleled experience and invaluable insight for how to lead a successful restaurant business. In addition to Quaker Steak & Lube®, John’s leadership extends to include over 750 restaurants across the country operated by TA Restaurant Group.

Denny O’Deens Vice President, Franchise Operations

Mr. O’Deens joined Quaker Steak & Lube® in March 2013 as Director of Franchise Operations. In December 2013, he was named Director of Operations for the Virginia Portfolio, at which time he oversaw five franchised restaurants that were being converted to corporate locations. His career includes restaurant operational positions with a Pizza Hut franchisee, as well as with TGI Friday’s. Denny is also a U.S. Army Veteran having served in Desert Shield/Storm.

Zeb Hastings Vice President, Franchise Development

Mr. Hastings joined Quaker Steak & Lube® in July 2011 as Vice President of Franchise Development. Prior to joining The Lube®, Zeb worked as Director of Franchising for Steak ‘N Shake. His other experience includes Managing Director for Z.H. LLC, a franchise consulting agency, Vice President of Franchise Development for O’Charley’s, Inc., and Senior Director of Re-Franchising/Franchising for Friendly Ice Cream Corp. Zeb also worked for Shawmut Bank in Boston as a Senior Credit Officer and Senior Vice President.

Lance Matthews Corporate Chef

With over 25 years of experience in the restaurant industry, Chef Matthews joined TA as Corporate Chef of Quaker Steak & Lube® in April 2016. His extensive resume boasts experience as a global sous chef, senior food buyer and restaurant manager, among others. Chef Matthews has worked at notable properties including Hotel Del Coronado, Sheraton Torrey Pines and Pechanga Resort and Casino. He also proudly served in the U.S. Navy after finishing culinary school and resumed his career upon his return.

Shannon Salupo Corporate Beverage Manager

With 18 years of experience, including in beverage vendor relations, cost containment, training, and beverage marketing, Ms. Salupo joined the Quaker Steak & Lube® team in May 2016. Her experience at Caesars Entertainment’s Horseshoe Cleveland, Hard Rock Café Cleveland, Longhorn Steakhouse, and local Cleveland restaurant Westpark Station has provided her a full 360-degree view of beverage management through the lens of manager, buyer, bartender and guest.

Andi Rice Director, Restaurant Marketing

Ms. Rice joined the TA restaurant team in 2010. She brings over 25 years of extensive foodservice marketing experience having worked on both the franchisor and franchisee sides of the business, as well as the agency and client sides. Her previous experience with regional and national chains in both the quick-service and casual dining segments such as Applebee’s & Wendy’s has developed within her a broad complement of marketing skills including new concept development, brand positioning, media strategy, program development and how to impact restaurant operations with profitable marketing.
